Festive Ice Cream Float

This recipe is sweet, creamy, and a fun activity with a group of friends or with the family. Not to mention, if you're an ice-cream lover all year round or live in a warmer climate, this recipe is for you.

Yields: 10 Servings | Prep Time: 15 minutes

Ingredients

  • 1 cup freshly squeezed lemon juice

  • 5 medium ripe bananas

  • ¾ cup granulated sugar; very fine if possible

  • 2 cups of half-and-half

  • 1 liter of lemon-lime soda (any brand)

  • ½ gallon vanilla ice cream or frozen yogurt

Optional Festive Rim:

  • ½ cup sweetened shredded coconut

  • Canned vanilla icing or corn syrup

Directions

  • Place lemon juice, bananas and sugar in a blender, cover and mix until smooth

  • Add half-and-half, cover and blend until smooth

  • Cover and refrigerate up to 1 hour

  • Just before serving, pour lemon/banana mixture into a punch bowl

  • Stir in soda and top with scoops of ice cream

  • Optional, but oh, so pretty; dip the rims of the glasses in corn syrup or vanilla icing then dip the coated rims into the shredded coconut

  • Enjoy!
